Medalhão com pimenta rosa

A Mari, minha irmã prendada, acabou também testando uma receita publicada na última Casa e Comida, esse medalhão ao molho de pimenta rosa de dar água na boca. A receita saiu me uma seção fixa bacana da revista, A Cozinha Dele, que traz homens metidos a chefs que têm apartamentos lindos. Para mudar o bifinho de todo santo dia. 

O que usar:
Para 4 pessoas
- 4 medalhões de filet mignon de 150 g cada;
- 1 1/2 xíc. de vinho branco (chardonnay ou outro branco seco);
- 2 col.  de conhaque;
- 2 col. de vinagre balsâmico;
- 1 col. de açúcar
- 1 xíc. de caldo de carne (se for usar em tablete, dissolva meio cubo em uma xíc. de água);
- 1 punhado de pimenta rosa;
- 1 xíc. de creme de leite fresco;
- azeite;
- sal e pimenta do reino a gosto;

Como fazer:
Misture o açúcar e o balsâmico em uma panelinha e leve ao fogo baixo por cerca de 5 minutos, até reduzir à metade e ficar em consistência de calda, levemente caramelizada. Tire do fogo e reserve;
Em outra panela, junte o vinho e o conhaque e leve para ferver em fogo alto até reduzir à metade;
Acrescente o caldo de carne ainda em fogo alto, mexendo de vez em quando, por 15 minutos, até reduzir à metade novamente;
Acrescente a pimenta rosa, a redução de balsâmico e o creme de leite fresco. Deixe em fogo baixo por 5 minutos e mexa ocasionalmente, até o molho ficar cremoso;
Quando colocar os últimos ingredientes do molho, comece a preparar a carne: aqueça uma frigideira com um fio de azeite, em fogo alto, e coloque os medalhões. Grelhe um lado da carne, vire e tempere o lado já grelhado com sal e pimenta do reino. Vire e repita do outro lado;
Coloque os medalhões nos pratos, regue com o molho e sirva com aspargos grelhados;
Receita boa é assim, fica igual à foto da revista!
